My husband really wanted to visit Yeongdong Expressway, run by Chef Kim Do-yun, who has a unique insight and affection for food ingredients.<\/p>\n<p>On June 3rd, right after the local elections, we headed to Yeongdong Expressway.<\/p>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_3_900_Screenshot_20260605_100446_NAVER.jpg\" alt=\"Restaurant Exterior\"><\/figure>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_4_900_Screenshot_20260605_100512_NAVER.jpg\" alt=\"Restaurant Exterior\"><\/figure>\n<p><b>Opening Hours and Waiting<\/b><\/p>\n<p>We arrived right at the 11 AM opening time, but there were already 12 teams on the waiting list. The estimated waiting time was 1 hour, and there were many Japanese tourists. Since there wasn&#8217;t a suitable waiting area, we spent time buying bread at the nearby Standard Bread or taking a short walk along the Yeongdong Expressway street.<\/p>\n<p>Around 11:50 AM, we received a text notification for entry earlier than expected and headed to the restaurant. We were seated after waiting for about 45 minutes.<\/p>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_5_900_20260603_122042.jpg\" alt=\"Waiting Notification Message\"><\/figure>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_6_1780620950166.jpg\" alt=\"Main Hall Interior\"><figcaption>We couldn&#8217;t take many interior photos because it was full, but the broth is prepared near the pillar on the left.<\/figcaption><\/figure>\n<p><b>Ordered Menu<\/b><\/p>\n<p>On our previous visit, we had bibim-myeon and dumplings, so this time we ordered different dishes. They also utilize wild vegetables from Jirisan to bring out the original flavors of the ingredients.<\/p>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_11_image1575051434300360662900_20260603_121534.jpg\" alt=\"Noodle Ingredient Information\"><\/figure>\n<p><b>[Half Plate Jeyuk]<\/b><\/p>\n<p>This dish is made with domestic pork belly aged for 2-3 weeks, boiled to retain its juices. It&#8217;s not the typical stir-fried jeyuk, but served as a clean, tender boiled pork without any gamey smell. When dipped in the fermented shrimp sauce, there was no gamey smell at all, and it was very delicious. My husband had tried it a few times as a meal kit from Market Kurly, but he was deeply impressed after trying it with freshly made noodles from the restaurant. The various toppings create a rich flavor. The deep yellow color comes from the dried mullet roe, which is ground dried fish roe to add umami. The perilla oil is at the bottom, so it needs to be mixed well.<\/p>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_18_900_20260603_120803.jpg\" alt=\"5-Color Vegetable Noodles and Makgeolli Vinegar\"><\/figure>\n<p><b>How to Use Makgeolli Vinegar<\/b><\/p>\n<p>The clear makgeolli vinegar, which can be chosen when ordering, changes the taste and adds flavor after eating about half of the noodles. My husband felt it was better to add all the makgeolli vinegar.<\/p>\n<p>The noodles are wide, about 4cm, making them easy to wrap with toppings. The perilla oil had a wonderful aroma, and the chewy texture of the noodles was excellent. The perilla oil here was so good that I wanted to buy it. Unlike my previous experience with bibim-myeon, the Anseong Jemyun was truly the best.<\/p>\n<figure><img decoding=\"async\" src=\"https:\/\/linksboo.blog\/wp-content\/uploads\/2026\/07\/linkboo_12921_19_900_20260603_120805.jpg\" alt=\"Makgeolli Vinegar Description\"><figcaption>The makgeolli vinegar is clear, so choose it when ordering. They say it changes the taste and adds flavor if you add it after eating half. My husband added all the makgeolli vinegar. They are mixed with dried mullet roe, domestic minced pork, and raw perilla oil. Personally, I prefer noodle dishes with a variety of toppings. My previous bibim-myeon was a bit too mild, but the Anseong Jemyun is truly the best. \u2661^^\u2661<\/figcaption><\/figure>\n<p><b>Conclusion and Overall Review<\/b><\/p>\n<p>After finishing our meal, we drank the broth from the self-serve bar. The slightly spicy finish at the end refreshed our palates.
