Baekbaek YoriSa Seasons 1 & 2
This is a Yeongdong Expressway run by Chef Kim Do-yun, who appeared on “Baeksujeo.”
I’m enjoying the Netflix show ‘Sikspoiler’, and while I’m a fan of Chef Choi Kang-rok, my husband likes Chef Kim Do-yun. My husband really wanted to visit Yeongdong Expressway, run by Chef Kim Do-yun, who has a unique insight and affection for food ingredients.
On June 3rd, right after the local elections, we headed to Yeongdong Expressway.

Opening Hours and Waiting
We arrived right at the 11 AM opening time, but there were already 12 teams on the waiting list. The estimated waiting time was 1 hour, and there were many Japanese tourists. Since there wasn’t a suitable waiting area, we spent time buying bread at the nearby Standard Bread or taking a short walk along the Yeongdong Expressway street.
Around 11:50 AM, we received a text notification for entry earlier than expected and headed to the restaurant. We were seated after waiting for about 45 minutes.

Ordered Menu
On our previous visit, we had bibim-myeon and dumplings, so this time we ordered different dishes. My husband had half a plate of jeyuk, and I chose the 5-color vegetable noodles.

[Order]
Half Plate Jeyuk & 5-Color Vegetable Noodles
The Specialty of the Noodles
The noodles here are made with organic whole wheat, directly roasted mung beans and soybeans, and raw perilla oil that has not been stir-fried. They also utilize wild vegetables from Jirisan to bring out the original flavors of the ingredients.

[Half Plate Jeyuk]
This dish is made with domestic pork belly aged for 2-3 weeks, boiled to retain its juices. It’s not the typical stir-fried jeyuk, but served as a clean, tender boiled pork without any gamey smell. It comes with fermented shrimp sauce and kimchi.

The boiled pork was glossy and tender, and the taste was excellent because much of the fat was trimmed off, making it clean. When dipped in the fermented shrimp sauce, there was no gamey smell at all, and it was very delicious. We were advised to eat the remaining meat with the noodle dish.

[5-Color Vegetable Noodles]
This dish offers a harmony of five kinds of fresh seasonal vegetables and raw perilla oil. My husband had tried it a few times as a meal kit from Market Kurly, but he was deeply impressed after trying it with freshly made noodles from the restaurant. All the ingredients are vegan, so it’s also recommended for those who don’t eat meat.

[Anseong Jemyun]
Anseong noodles are made from beans and are meant to be mixed with dried mullet roe, domestic minced pork, and raw perilla oil. The various toppings create a rich flavor. The deep yellow color comes from the dried mullet roe, which is ground dried fish roe to add umami. The perilla oil is at the bottom, so it needs to be mixed well.

How to Use Makgeolli Vinegar
The clear makgeolli vinegar, which can be chosen when ordering, changes the taste and adds flavor after eating about half of the noodles. My husband felt it was better to add all the makgeolli vinegar.
The noodles are wide, about 4cm, making them easy to wrap with toppings. The perilla oil had a wonderful aroma, and the chewy texture of the noodles was excellent. The perilla oil here was so good that I wanted to buy it. Unlike my previous experience with bibim-myeon, the Anseong Jemyun was truly the best.

Conclusion and Overall Review
After finishing our meal, we drank the broth from the self-serve bar. The slightly spicy finish at the end refreshed our palates. We highly recommend Yeongdong Expressway if you enjoy dishes that are mild, savory, and maximize the original flavors of the ingredients.
Neighbors, stay healthy!
